Amaranth is a herb which has been used in Europe since the 16th century when it was imported from the South and Central America. It was being used for hundreds of years by the fabled civilizations of the Aztecs and Incas. Latin name "Amaranthus" means "eternal" and indeed the Amaranth herb does not lose blossoms. In winter dried blossoms are put in vases and therefore in slavik languages Amaranth is also called a "winter friend of people"".
Amaranth seeds are a rich source of vitamin B2 (riboflavin), E, B1 (thiamin), D, squalene, omega-unsaturated fatty acids and many other beneficial trace elements. Amaranth improves mental performance and memory functions while reducing fatigue and mental stress. It is the largest natural source of squalene – it contains up to 8%, while shark liver oil which is also rich on squalene has only 1.5%.
Squalene is considered an anti-cancer agent, it is an essential component of human skin which retains oxygen and supplies it to organs. Lack of oxygen is the main reason for the formation and growth of tumor cells. Squalene is also a very strong immunostimulant and a source of vitamin D.
